Attempting Low Fat Baking

I recently stumbled upon this great blog called 366 Days of Pinterest. It was started by a woman who, like most of us, realized she was spending a lot of time pinning ideas but enough time actually implementing them, so she decided to start a blog where she tried a new Pinterest idea everyday - everything from homemade Nutella Fudgesicles to DIY Grout Cleaner!

I decided to try the Greek Yogurt and Cake Mix recipe with the "Your New Favorite Frosting" recipe, to make super-easy, lower-calorie cupcakes.

All you need!

Cake Ingredients
- 1 Box Cake Mix (that's it! You don't need the eggs or oil the box calls for!)
- 1 Container Plain Greek Yogurt
- 1 Cup Water



Frosting Ingredients:
- 1 Packet Vanilla Pudding Mix
- 1 Cup Skim Milk
- 1 Container Cool Whip (I used Lite)



Cake Directions: Preheat oven to 350 degrees. Mix cake mix and yogurt in bowl, then mix in 1 cup of water.  Transfer to cupcake pan with cupcake liners (or cake pan coated in non-stick cooking spray). Bake until toothpick inserted into center of the cake comes out clean. Use baking time directions for pan size on cake mix box. That's it!

Frosting Directions: Mix vanilla pudding packet with half the milk called for on the box - with the mix I used this was 1 cup.  Stir until mixture thickens then fold in the whole container of Cool Whip.


I personally was not thrilled with this frosting. To me it just tasted like vanilla pudding and Cool Whip - which is what it was - not cake frosting.

So I decided to mix in a little cocoa powder.


I think the cocoa improved the taste, but if you decide to add some too, don't add too much! I think I added a little too much and the frosting became kind of a weird, thick consistency.



 My overall feelings on this: The cake was actually pretty good! I mean, it wasn't as good as cake made with eggs and oil, but it was surprisingly moist and fluffy.  The frosting on the other hand, eh. I mean it tasted good, it just didn't taste like cake frosting. And despite it's name, it is not my "new favorite frosting." I might keep experimenting with it though to see if I can improve it, because it does have potential.

I'd say it's worth trying, especially if you have a sweet addiction tooth like me, and you can't have Sprinkles or Georgetown Cupcake everyday.

  1. Have you heard of adding diet soda? (I feel weird saying 'soda' because I'm from the south and we call everything 'coke' around here.) I'm not exactly sure what kind you are supposed to use. Maybe diet coke or dr. pepper? I'm not sure but you can google it. You just mix the can with the cake mix and that's it. No eggs, water or oil. I think it is supposed to be a little better for you too.

    1. i've heard of soda, darker sodas with chocolate cakes, and lighter colored sodas with like lemon/white cakes. I wonder how that chemistry works to make it moist without any oil.eggs.water. i feel like i've see this on Pinterest now that i think about except it was a fruit cobler with cake topping and a seven up or something.

  2. They look pretty yummy! I'm not really a fan of low fat baking, but if it tastes as good as it look there, I'd try it!
